Dough & yeast

Ari Levi’s course. Flour, starter, and a proofing window — no cake display.

What rises in class

We weigh water and flour, set a starter, knead to the window, braid challah, brush with egg, scatter sesame or poppy. The oven is a teaching oven, trays are shared, you take the loaf home — this is not a counter sale.

Ari does not teach creams, macarons, or a “wedding cake in a day.” If you need a knife or an evening table — those are Maya’s and Noa’s neighboring courses.

Shift order

Arrive by 09:00, knead until noon, proof while the group eats its own bake from the market, bake until close. On Friday the shift is shorter: we finish one challah, no second proof.

Flour, yeast, and seeds come from the school. A formula for home can be a list after class — we write the recipe on a card, not on a blog.
